Beach Love

 
 
We are officially on summer vacation. Woohoo! I am lucky enough to be able to spend the summer at home with my boys, and not go to work every day. This may be my last year staying home, we'll see.  For now I plan to create a fun filled summer for my boys, and enjoy every minute of it. My husband went away on a canoe /camping trip with his buddies, so the boys and I decided to have a beach day, and a movie night. We had a blast. It was a bit breezy on the coast, but not cold enough to not stay. The boys were brave enough to swim, (me...not so much) and play in the sand for hours. I anticipate many more beach days to come this summer. I may have to sneak one in alone for the sake of relaxation and reading my book. Neither of which are possible when children are involved. ;)

School Lunch

 
Here is my last school lunch post of this school year. I feel like the year has flown by so quickly.(with the exception of the really long cold winter we had.) B is done with his Kindergarten year on Thursday. Sigh. My big boy is growing up so fast. I am so excited to have both of my boys home for the summer. I feel so thankful that my husband works hard so I am able to stay home with the boys. We won't be able to do this forever, but for now it's still working. Happy Summer.

Orange Cream Pop



As summer brings warmer weather we begin to crave cold sweet treats. Knowing I had nothing prepared for dessert tonight (dessert is pretty big in our house) I looked around for ingredients to make popsicles and thought, hey I can make a creamsicle.  They came out great. I first just blended the yogurt and orange juice together. It was a little too tart so I added maple syrup and vanilla to it.

You will need:
1 c.Orange Juice
1/3 c. Vanilla Yogurt
1tsp. Maple Syrup
1tsp. vanilla extract

Just mix all ingredients together and freeze in popsicle moulds, or small paper cups. I used small paper cups. After about 30 minutes in the freezer I added the sticks and froze completely after that. Just tear the cup away.

School Lunch


When I was a kid, my sister Amy used to cut up celery and spread  cream cheese on them with cut up green olives. It was such a simple and delicious snack, I have eaten it my whole life. My husband turns his nose up at this combination, as he does with lots of my childhood snack choices. :) I love the fact that my child shares the love for the same type of snacks I do.

Dried pea crisps
Yogurt tube
Celery with cream cheese and olives

School Lunch


Happy Monday. It is going to be in the 80's today. Maine is funny with weather. We can go from 60's to 80's with the wave of a hand. I am thankful for some warm days. We love to get out of the house, and enjoy the sun. I can see lots of beach days in the near future. Enjoy your day. I hope the sun is shining for you too.

School Lunch


If you look closely at the sandwich you will notice that it is cut almost like a puzzle piece. B thought that was funny when he went to eat it, since he hadn't realized it was cut. School is almost over. Ahh..bittersweet. My oldest will be a first grader, I can't even believe it. I have a few more school lunches to post before the school year comes to an end, so hang in there.

School Lunch



The sun is shining, the birds are chirping, and I'm one happy mommy. I love this time of year. I feel like we are constantly outside, which means the house stays cleaner longer, (since no one is inside messing it up) and we get to do fun summer time activities that we've been longing for all 5 months of winter. :) We planted our garden last weekend, so the kids love watering the plants, and watching them grow. Only three weeks left of school and then we can officially kick off summer.
