I made these cupcakes for my father's birthday. The big one in the middle is actually a small cake made in a spring form pan. The peanut butter frosting on my gluten free chocolate cupcakes was delicious.
Recipe for gluten free chocolate cupcakes:
1c.gluten free oat flour
1/2 c. gluten free honey buckwheat flour
1 c, sugar
1 tsp. baking soda
1 tsp. salt
1/3 c. cocoa powder
1/2 c. veg oil
1 c. water
1 tsp. vinegar
Bake at 350 for 25 min.
Peanut Butter Frosting
1/2 c. butter, softened
1 c. organic creamy peanut butter
2-3 tbs. milk
2 c. powdered sugar
