Gluten Free and Egg Free Snack Cake
Okay, this is the best gluten free and egg free cake ever. Hands down, I promise you will not be disappointed. If you truly eat a gluten free diet and you try this cake, you will see what I mean. And, it is very easy to make. Look at how moist it is, delicious. This recipe is inspired by Betty Crocker. I used her snack cake recipe as a guide, and created a gluten free version.
You will need:
1 c. gluten free oat flour
1/4 . coconut flour
1/4 c. light buckwheat flour
1/4 c. baking cocoa
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. xanthem gum
3/4 c. turbinado sugar
1/3 c. veg oil
1 tsp. cider vinegar
1/2 tsp. vanilla
1 c. cold water
Topping:
3 tbs. sugar mixed with 1/3 c. chocolate chips.
Bake at 350 for 30 minutes.
